Some of us may be in lockdown this Halloween, so here's a bake to help get the whole family involved! This recipe looks a long one, but we promise you it will be worth it!
What you will need to bake this spooky bake:
Firstly you will need a bit of room in your freezer!
Piping bag with a small nozzle
Non-stick whoopie pie baking tray(s) or cookie tray.
For the Paste (You will want to make this some time before you plan to eat the whoopie pies)
-25g Unsalted Butter
-25g Icing Sugar
1 Large egg (just the egg white)
28g Plain Flour
Green or black food colouring
For the Cake & Filling:
280g Plain Flour
1/2 tsp Bicarb
1 tsp Baking Powder
1 tsp Cinnamon
1 tsp Ginger
1/2 tsp Salt
200g Dark Brown Sugar
115ml Vegetable Oil
(You can buy it tinned in Sainsbury's in the American sweets section)
300g Icing Sugar
55g Unsalted Butter
115g Cream Cheese
1/2 tsp Vanilla Extract
1 tsp Maple Syrup (optional)
Let's start with the paste!
You may want to do this part a day before or in the morning as the paste needs to freeze before baking.
Cream the butter and sugar with an electric whisk.
Gradually mix in the egg white.
Fold in the flour until you get a paste like consistency.
Then add the food colouring to the desired shade, roughly 1-2 tbs should do it.
Next put the paste into a piping bag and now the fun begins!
Get your non-stick tray and start drawing your spooky designs using the paste.
Once you've finished having fun with the paste, place the tray(s) in the freezer until fully frozen.
Now the batter...
Your tray should still be in the freezer at this point.
In a bowl whisk the flour, bicarb, baking powder, salt and spices together.
In a separate bigger bowl combine the brown sugar, vegetable oil, pumpkin puree and milk. Add the egg and whisk.
Gradually add the dry ingredients until fully incorporated.
You need the mix to be a batter like consistency.
Pop the mix in the fridge for 30mins and preheat your oven to 180°.
You may want to make the filling whilst your mix is chilling.
Once the 30mins are up get your tray from the freezer.
Using a spoon scoop the batter into the trays, covering your designs.
Bake in the oven for 10 minutes.
Remove from oven and carefully prize the whoopie pie's out revealing your designs!
Leave on a wire rack to cool fully.
The lovely filling..
This filling will really make the whoopie's irresistible!
In a bowl whisk the butter until smooth, then add the icing sugar.
Add the cream cheese, vanilla and maple syrup and whisk until smooth.
Then spread/pipe the filling on one half of the whoopie pie and sandwich together.
