A yummy, quick and easy coffee cake!
You will need:
- 3 Eggs
- 150g Self Raising Flour
- 170g Caster Sugar
- 170g Butter
- 20g Cornflour
- 1 Teaspoon of Vanilla Extract
- 2-3 Tablespoons of Milk
- Flat Tablespoon of Instant Coffee dissolved in 1 Tablespoon of warm water
- 2x21cm Tins
- Optional - Walnuts for decoration
For the frosting you will need:
- 150g Butter
- 350g Icing Sugar
- Half Teaspoon of Instant coffee dissolved in 1 Tablespoon of warm water
Preheat your oven to 170°C | Fan Oven
You can either make this in a food processor or use an electric mixer. First grease the tins with a little butter.
Cream the butter and sugar in a large bowl.
Then add the rest of the ingredients to the same bowl and mix together until it's all incorporated.
Pour the batter into your tins and bake for around 20 minutes until your cake tester comes out clean.
Leave the cakes in their tins for 10 minutes before turning them out to cool completely.
For the frosting, pop the butter, icing sugar and the dissolved coffee in to a bowl and using an electric whisk combine until light and fluffy.
Then carefully spread the frosting on one of the cakes and place the other on top, and then decorate the top of the cake with the rest of the frosting.
Pop the kettle on, pour yourself a cuppa and enjoy a slice of your homemade coffee cake!
